Dinner idea: Florida Seafood Salad
Dressing:

• 1⁄4 cup olive oil
• 1⁄4 cup vinegar
• 2 tablespoons water
• 1⁄2 teaspoon dried basil or oregano
• 1 clove garlic, minced
• Dash of freshly ground pepper

Arrange salad greens on four chilled plates and add whatever you like (i.e. croutons, olives, tomatoes, carrots, oranges, cheese, hard-boiled egg). Top with two cups cooked, chilled seafood, divided. Pour on the dressing, or serve on the side. Seafood suggestions: shrimp, bay scallops, salmon, crab. Microwave with butter, 2 minutes for fish or 1 minute for the rest.
